9:30 a.m. Hoppy Easter! Today was a difficult one.
1:00 p.m. BRUNCH! Gianna, Liz, Chloe and I went to Storytellers’ Cafe for a special Easter celebration.
WOW, I think this was the ultimate test for me. This brunch was not only decked out, but it was all-you-can-eat. French toast, MICKEY WAFFLES, bacon, sausage, fruit galore, an omelette station and so many Easter-themed pastries I could cry. Yeah, I had to have a whole lotta self-discipline today.
Here’s what I put on my plate:
- B.Y.O.O. (build your own omelette) with egg whites, onions, peppers, spinach and mushrooms
- Smoked salmon
- Potatoes (I did not eat the corned beef that came with it)
- Chilaquiles (tortilla chips, tomatoes, eggs)
5:45 p.m. snack
If you haven’t noticed already, I am a huge fan of avocado toast. So, I had some fresh strawberries and – you guessed it – some Ezekial bread toast with avocado on top.
7:45 p.m. vanilla shake
9:00 p.m. workout
I will be honest with you, I went to bed a little hungry tonight. And this has been a little frustrating. Not to say I can’t eat right before bed, but vegetables do not seem appealing at this time of night. Throughout the day, my appetite is definitely curbed, but when it hits midnight and I am still up doing things, my body craves that midnight snack, but I. MUST. RESIST. THE URGE!!!
